DAVID’S HEMINGWAY SPECIAL

“I discovered the Hemingway while on a holiday in Key West, Florida where Hemingway had a house. It’s a great anytime cocktail. The grapefruit is sharp and tangy and combined with double helping of rum give all help to give it a knock out kick. It's a heavyweight.”

INGREDIENTS:

105ml Havana Rum
30ml fresh squeezed pink grapefruit
22.5ml Maraschino Liqueur
30ml freshly squeezed lime juice
15ml sugar syrup

METHOD:

Shake all ingredients with ice and strain into a chilled glass.

VIRGINIA’S FRENCH 75

“During lockdown I think my favorite cocktail has been a French 75. I like it as you only need one, they are quite strong and have a sharp kick from the lemon, softened by the bubbles and then you get a hit with the gin! It’s the perfect drink for a treat, which I think is needed during this strange time, and to have before dinner (goes well with crisps) although inevitably once you open a bottle of champagne it will be finished that night!”

INGREDIENTS:

2 oz Champagne
1/2 oz lemon juice
1 oz gin
2 dashes sugar syrup

METHOD:

Combine gin, syrup, and lemon juice in a cocktail shaker filled with ice. Shake vigorously and strain into an iced champagne glass. Top up with Champagne. Stir gently.

VICTORIA’S WHISKEY SOUR

“I first had one at Morton’s Steak House in Hong Kong whilst on a development trip about eight years ago and it fast became a favorite tradition to visit if the schedule allowed. Still yet to find another place that makes them as good…but I continue to search!”

50ml bourbon
35ml lemon juice
12 ml sugar syrup
2 dashes Angostura bitters
½ fresh egg white

METHOD:

Shake all ingredients hard with ice, pour into an ice-filled glass.
